Executive Chef Russell Miller
Russell D. Miller II has been appointed the executive chef for The Inn at Bay Harbor - A Renaissance Golf Resort. In his role, Miller will be executing the culinary presentations of the South American Grille and Wine Bar and the award winning restaurant Sagamore’s Dining Room. Sagamore’s has received the Wine Spectator Award of Excellence each year since 2002.
Chef Miller was most recently sous chef and catering chef at the former Latitude Restaurant in the Village at Bay Harbor. Having earned an associates degree in culinary arts from the Pennsylvania Culinary Institute Le Cordon Bleu, Miller began his culinary career at the Roxy Cafe in South Hills Village, Pennsylvania. Shortly thereafter he moved to Michigan and served as the chef de cuisine for Everett’s Restaurant in the Mountain Grand Lodge and Spa at Boyne Mountain Resort in Boyne Falls, Michigan before joining the Latitude culinary team.
Sous Chef CJ Toton
Casimir Michael Toton Jr. has been appointed sous chef for The Inn at Bay Harbor - A Renaissance Golf Resort.
Chef Toton began his culinary career in Charlevoix, learning about local cuisine at a deli before taking a position at Stafford’s Weathervane Restaurant. From there, he moved on to the Original Pancake House in the Village at Bay Harbor and later, took a position at the former Latitude Restaurant where he worked under Chef Richard Travis and learned how to operate in a fine dining, high volume atmosphere. While working at Latitude, he earned an Associate in Science from North Central Michigan College.
After three years with Latitude, he moved to Traverse City and held a supervisory position at the Catch Island Grill; a Caribbean themed restaurant. Shortly thereafter he relocated back to the Charlevoix region and again worked at Stafford’s Weathervane Restaurant. Toton has been at The Inn at Bay Harbor for 10 months and in his new role, will assist Chef Miller in the culinary presentations of the South American Grille and Wine Bar and the award winning restaurant Sagamore’s Dining Room.
